Butter Chicken

Not only is this dish beyond delicious, filling and super easy to make, it also is the perfect recipe for Keto and low carb diets, so you wouldn’t have to be worried about how much cream and butter it has. This dish would take at most an hour to make, for me, when I made it the first time, it took me about 45 minutes. This recipe is packed with key ingredients, especially super spices such as Garam Masala, Turmeric and Cumin. These super spices offer a bomb flavor but are still incredibly good for you.


Ingredients:


Easy Marinade:

· 900 g Chicken Skinless

· 1 cup Greek Yogurt

· 2 Tbsp Lemon Juice

· 2 Tbsp Garam Masala

· 1 Tbsp Turmeric

· 1 Tbsp Cumin

· 1/2 Tsp Kosher Salt to taste


Butter Sauce:

· 60 g Unsalted Butter (Ghee)

· 1 Tbsp Olive Oil

· 1 Medium Onion Ideally Red

· 3 cloves Garlic

· 1 Tbsp Ginger Fresh

· 1/4 Tsp Ground Cinnamon

· 1/2 Tbsp Chili Powder

· 1 can Diced Tomatoes

· 1/2 Tsp Kosher Salt to taste

· 1/2 cup Sour Cream


Marinade instructions:

1. Add the yogurt (1c), fresh lemon juice (2 T), garam masala (2 T), ground turmeric (1 T), ground cumin (1 T), and kosher salt. Mix until fully combined.

2. Add (900 g) boneless chicken and mix well. Make sure the chicken is thoroughly cooked so it can refrigerate and absorb the spices and flavors.


Butter sauce instructions:

1. Heat a big pot or even a saucepan and add the butter or ghee.

2. Add garlic, cinnamon and ginger and fry for 1 minute. It helps loosen the flavors.

3. Add in onion, always stir until browned.

4. Combine onions, salt and chili powder. Cook on medium heat for around 8-10 minutes, until the tomatoes are completely cooked.

5. Get the marinade from the fridge and mix for 5-10 minutes in your pan and cook. Here cooking time is depending on chicken thickness.

6. Stir in a drop of salt or lemon squeeze to taste.

7. Add cream and simmer for a couple of minutes.

8. Serve over rice with cauliflower and garnish with cilantro or parsley.
