This easy and quick recipe of teriyaki chicken is a personal favorite of mine. An authentic chicken teriyaki dish requires mirin, Japanese rice wine, and/or the sake, also an alcoholic beverage. However, the good thing about this recipe is that you can use vinegar instead of these and the dish will taste equally delicious!
INGREDIENTS:
1 ¼ lbs boneless chicken breast diced into 1-inch cubes
2 Tbsp honey
1 Tbsp olive oil
¼ cups low-sodium soy sauce(mix two parts regular soy sauce and one part water to make low-sodium soy sauce)
½ tbsp vinegar
¼ cup water
1 ½ tbsp brown sugar
¼ tsp toasted sesame oil (optional)
Ginger and garlic to taste
2 tsp cornstarch
Instructions:
Mix all ingredients except olive oil in a bowl and let the chicken marinate for at least 15-20 minutes. Heat olive oil in a pan over medium-high heat. Take the chicken out of the bowl and add it to the pan( there must be some liquid marinade left, set it aside). Cook the chicken until its brown on both sides and then add the remaining sauce. Stir the sauce in with the cooked chicken and continue to cook until the sauce has thickened. Add some sesame seeds and your chicken teriyaki is ready!
TIPS:
You can change the quantity of soy sauce and vinegar to your taste.
Add more water if you want the dish to taste less salty.
Be careful not to overcook the chicken or it will dry out.
Lastly, you can serve this dish with vegetable or egg fried rice and bam! You have the perfect dinner ready.
