From the word ‘’Cheeseburger’’, you can automatically assume that this dish would be not so healthy and high in calories but in this case, I will clarify that these cheeseburger bites have high protein content and low-calorie amount. My sister makes this meal regularly for lunch and sometimes for dinner and she absolutely loves them, she really recommends this recipe as it is somewhat filling, tastes amazing, and is quite easy to prepare as well. To start off, these cheeseburger bites won’t need much. I'm going to touch the breadcrumbs and how you can replace them below, but first I want to touch the condiments and beef that will make up your cheeseburger bites. The recipe includes ketchup, mustard, and pickle. If you want to leave out pickles, you can do so without having to tweak anything else, because they are in small amounts. On the other hand, you may need to add a little more liquid or add some of the remaining condiments if you want to remove the ketchup or the mustard.
As far as the meat goes, you can use any ground meat for your cheeseburger bites. If you are going to use a fattier cut of meat, take note that you may want to reduce the egg whites in the recipe since you will have some fat run-off during cooking. If you go under the 85/15 mark with the meat, you'll want to keep an eye on ensuring that no fat is at risk of slipping off the muffin tin. You could always go with gluten-free breadcrumbs if you want.
Here is the list of ingredients you would need:
1 lb. Lean Ground Beef, macros with 96/4
3/4 Cup (184g) Liquid Egg Whites, or 4 whole egg whites
1/2 Cup (56g) Fat-Free Shredded Cheddar
1/2 Cup (56g) Shredded Parmesan
1/2 Cup (56g) Breadcrumbs
1/4 Cup (68g) Reduced Sugar Ketchup
3 Tsp (45g) Mustard
5 small (50g) Dill Pickles, finely diced (relish can be used as a substitute as well)
Instructions:
Preheat the oven to 400F and spray a 24-muffin tin with nonstick cooking spray.
Brown the ground beef (or meat of choice) in a large skillet over medium-high heat.
While the meat is cooking, mix the remaining ingredients in a large mixing bowl.
After briefly cooling, add the cooked meat to the remaining ingredients, stir until even.
Spoon the mixture into the mini muffin tin, make sure to remove any excess between slots.
Bake for 23-25 minutes or until muffin tops are golden brown.
Take note:
Each cheeseburger bite has 1 Smart Point (blue plan).
Modifying ingredients may affect cooking time. If the bottom of the burger bites are still soft, extend the cook time by a few minutes. Be careful not to overcook (don't burn the tops).
