Midnight Munching

Ever feel hungry at odd times and wish for a small snack to keep you going for the rest of the day, or do you feel drained of energy while studying? Here are 2 easy, healthy, and delicious snack recipes that you’ll love for sure! Roasted chickpeas, and salt and vinegar potato chips!


1) Roasted chickpeas

Chickpeas are a big part of our meals in the subcontinent, but have you ever considered making them as a crunchy snack? A healthy, energizing but a delicious snack that can be made quickly and can be munched on throughout the week (By storing them in an airtight container). It can also be spiced according to your preference making it versatile.


Here are the ingredients you will need:

· Dried and cooked chickpeas (skins removed) – 2 cups

· Olive oil – 2 teaspoons

· Salt – ¾ teaspoon

· Smoked paprika – a pinch (adjust to taste)

· Garlic powder – a pinch (adjust to taste)


Preheat your oven to 220 degrees Celsius. Pat your chickpeas with a paper towel to make sure they are dry and all loose skins are removed. Now all you need to do is mix all the ingredients in a bowl together (You can add chili powder or anything else to suit your taste) and spread them on a baking sheet. Bake them for 15 minutes, toss them then cook them for another 15 minutes. You may cook them for more time if you prefer them crunchier.


2) Salt and vinegar potato chips

Potato chips are pretty easy to find but are they are the healthiest? Are you unable to go out during this pandemic and buy your favourite salt and vinegar chips? Here is a recipe that you can guarantee are healthy and super easy to make.


All you need is:

· Potatoes – 400 hundred grams of thinly sliced potato chips

· Apple cider vinegar – 1 cup

· Salt – 1 ½ teaspoon

· Olive oil – 2 tablespoons

Preheat the oven to 230 C. Coat the baking sheet with a bit of oil (can be any oil). In a bowl, mix all the ingredients well and make sure the slices are coated evenly. Spread the potato slices in a single layer on the baking sheet and place it in the oven for 20 – 25 minutes. This will lead to the chips being a light golden color and crunchy. Make sure they do not brown and overcook. Once done, let cool and serve!
